Sparkling wines of Georgia are produced in different ways. The most common way is charm, where fermentation takes place in huge tanks and the wine is bottled under pressure. Less common is the classic method of production with secondary fermentation in a bottle, which is always written on the central label. Modern winemakers include in their practice blending with wines fermented in Qvevri. And also Petillant Naturell wines - PET-NAT made with a single fermentation in the bottle, and not completely removed sediment began to appear on the market. There are a lot of variations in this category, as not fully fermented wines from Qvevri can participate here, and the addition of must in the fermentation phase to existing still wines ... Today is the most creative niche.
